- Observed kitchen employee eating a torta and drinking soda from a can in the kitchen
- Torta was placed (half-eaten) on baker's table
- Employee shall eat, drink or use any form of tobacco only in designated areas where contamination of non-prepackaged food, clean equipment, utensils and linens, unwrapped single-use articles, or other items need protection cannot result
- Observed facility-prepared ham tortas (containing tomato, diced onions, lettuce, mayo) at cashier counter without refrigeration
- Sandwich wrapping lack time
- Way employee explained time on display is acceptable, however time as public health control procedures must be in place as follows: A
- If time only, rather than time in conjunction with temperature, is used as the public health control for ready-to-eat potentially hazardous food that is displayed or held for service for immediate consumption, the following shall occur: 1
- Food shall be marked with the time that is 4 hours past the point in time when the food is removed from temperature control

- Food shall be served or discarded within 4 hours from point when food is removed from temperature control

- Food in unmarked containers or packages or marked to exceed a 4-hour limit shall be discarded

- Written procedures shall be maintained in food facility and made available to enforcement agency upon request, that ensure compliance with this section
- Observed soda machine nozzel and nozzel area unsanitary
- Remove residue and sanitize regularly to prevent build-up
- Observed cages of prep tables encrusted with old bread/donut batter/dough
- Clean food-contact equipment or areas regularly to prevent accumulations.
