Lack of knowledge demonstrated regarding food safety Install wall mounted soap and towel dispensers at sink in waiter's station The concentration of the final rinse at the dish machine measured only 10 PPM Make the necessary repairs and adjustments to maintain 50 PPM minimum Numerous old rodent droppings were observed on the storage racks at rear of facility Removed any damaged packages of food Also, remove droppings and sanitize area Owner was observed sitting down in kitchen and eating, discontinue this practice Eating and drinking can only take place in dining area.	4/16/2008	76
