Handwashing shall be conducted at handwash sink, dishwashing at 3-compartment sink and any food preparation (washing fruits/veggies, thawing food) at food prep sink only
Food prep sink must be sanitized prior to use with food purposes
Install/stock handwash sink with paper towels
Clean, sanitize and maintain soda nozzles and diffuser daily to remove excessive accumulation of mildew
Set up daily sanitizer solution to store used wiping cloths when not in use
Approximately one gallon of water per tablespoon of bleach, concentration 100ppm chlorine.

All food in deli hot case at or below 123 degrees must be kept at or above 135 degrees for hot holding
