There was no knowledgeable person in charge when I first arrived. In absence of certified food manager, there must be a knowledgeable person in charge. Employees were not aware of proper cooking temperatures and reheating temperatures. The steam table is used to reheat and also to continue cooking ground beef (taco meat). Advised employees need training which I can provide. There is no current certificates available for certified food managers. Please provide current proof of recertification.
