    Observation: Poor handwashing procedures observed. Employee observed washing hands at 3-compartment sink
    Correction: Educate employees on proper handwashing and routinely monitor the employee's handwashing procedures to ensure they are effectively cleaning their hands.

    Correction: Ensure that employees are properly cooking potentially hazardous food to the minimum required temperature for the specified amount of time in accordance with the Regulation. Be particularly careful in cooking those foods known to cause severe foodborne illness and death, through daily oversight of the employees' routine monitoring of the cooking temperatures.

    Observation: A food employee was observed cleaning their hands in a food preparation sink or a sink used for utensil washing.
    Correction: Instruct food employees to clean their hands in a handwashing lavatory. Food employees may not clean their hands in a sink used for food preparation or utensil washing.
  • Cloths - Wiping Cloths - Use Limitation
    Observation: Wiping cloths improperly used. Being used to anchor cutting boards.
    Correction: Ensure cloths used for wiping food spills are not used for any other purpose. Will use washable rubber mats for this purpose.
  • Food - Miscellaneous Sources of Contamination
    Observation: Fresh cut flowers stored in several refrigerators along with ready to eat foods. Operator agreed to move those to another refrigerator to minimize risk of contamination.
    Correction: Protect food from miscellaneous sources of contamination.
  • Critical: Food - Potentially Hazardous Food - Cold Holding*
    Observation: Several food items--mixtures/sauces cold holding at improper temperatures in walk in cooler and in 2 door refrigerator next to dishwashing area.
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Operator agreed to discard those foods stored at improper temperature for more than 4 hours and to move items prepared within the last 4 hours into more shallow pans and repidly chill in a different refrigerator. Operator further agreed and called a refrigeration mechanic to repair tommorrow am and will monitor food temperatures in all refrigerators at least every 4 hours to ensure stored at 41oF or below.

Today, opening inspection. Layout and equipment per plan review.
Small ceiling leaks observed in kitchen (none over food prep, food storage, or kitchenware areas). Should leaks occur directly above food prep/storage areas--establishment to cease operating until leaks are repaired.
Operator to repair kitchen exterior door and add self-closing device within seven days. Also, prior to next inspection, all shelving will be raised a minimum of 6" from the floor.

No violation noted during this evaluation.
