First of all, we recently changed the name of our business to VersAbility Resources. The second is that we are not actually a restaurant but a non-profit organization dedicated to providing people with disabilities the ability to live, work, and thrive in the VA Peninsula.
Violation: 1790 - The cavity of the microwave ovens are soiled. Using the manufacturer's recommended cleaning procedure, clean the microwave oven at least every 24 hours.
Comments:
Point of service only. There is no food preparation on site. Food prepared at Hampton Community Correction Center, portioned and delivered by PAA. Request preparation site place time of prep on an index package to implement use of time as a public health control.

Violations:
1150 - Aluminum foil used to line utensil drawers. Remove the foil lining. The drawers is cleanable without lining it.
2000 - Corrected During Inspection Box of singl service cups found stored on floor. Store single service in a clean, dry location where not exposed to splash, dust or other contamination at least 6 inches above the floor.
Comments:
This is a point of service, there is no food prep on site. Food acquired through PAA from Hampton Correctional facility. It is individually portioned, and delivered hot. Daily temperature checks at time of delivery.

Comments:
Arc of VA is a point of service for lunch. There is no food preparation or portioning in this facility. Food is prepared at Hampton Correctional facility on W, Pembroke Ave, delivered in indivivually portioned trays at approx 11:00 AM and served 11:15 - 11:30 AM. Temperature log of refrigerator and food arrival temp are maintained on site.

Violation: 1570 - Repeat The door gasket to the hot holding box is in poor repair. Replace the door gasket in accordance with the manufacturer's specifications.
Comments:
ARC is point of service only. Food prepared at Creative Options Cuisine. Creative Options Cuisine is closing operation on June 30, 2008. ARC is searching for a new provider.

1570 - The door gasket of the CreCor is damaged. Replace the door gasket in accordance with the manufacturer's specifications.

1730 - Corrected During Inspection Food scoop is missing an end cap. Discard, repair or replace the food scoop.
1800 - Repeat The exterior and face frames of refrigertor are not clean. Clean the surfaces at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
Comments:
Permit for 2008 issued. Back of permit reviewed. Updates to Food Code provided. Employee health policy discussed, information provided.

0220 - Corrected During InspectionCritical One person was eating in the kitchen. Provide a designated area where employees may eat so as not to contaminate exposed food, clean equipment, utensils, and linens, or unwrapped single-service and single-use articles, or other items needing protection.
0480 - Unlabeled food containers. Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.
1510 - The person in charge could not provide a food temperature measuring device. Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.
1570 - Handle of refrigerator is loose. Repair the handle.
1800 - Fans are not clean. Clean the fans.

0450 - Corrected During InspectionCritical Employees observed handling ready-to-eat (RTE) food with their bare hands. Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
1150 - Paper lining bottom of ref is not designed or constructed to be easily cleanable. Remove paper. The bottom of the ref is cleanable.
1800 - Gaskets of freezer and ref dirty. Clean the surfaces at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
Comments:
Point of service for most food; food prepared at Creative Cuisine. Sandwiches made to accomodate patrons with dietary limitations. Very clean kitchen. Permit for 2007 issued.

Violation: 1570 - Handle of hot box in a state of disrepair and damaged. Repair the hot box to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter.
Comments:
This facility has become a point of service. Food is prepared at Creative Cusine, part of HNNCSB, transported to ARC and served. There is no cooking, food prep or storage. Refrigerator and hotbox to hold food from time of delivery (11:30 AM) until service (11:45 AM).

Violations:
1150 - The nonfood contact surface of the plastic tub is cracked. Alter or replace this item to provide a surface that is free of unnecessary ledges, projections, and crevices. Tub may be used for prepacked items. Do not use where food contact is possible.
3080 - Less than 50 foot candles of light was noted on the cooking counter. Provide at least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor
3220 - Corrected During Inspection Mops not hung up to air dry. Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
Comments:
1. Ms. Bell's food manager certificate expires in October 2005 2. City code requires that the certified food manager must be a full time employee. If the Certified Manager reduces work hours to less than full time, another manager needs to complete certification training.

Violations:
0380 - Critical Many dented cans stored with undamaged food. Dented/damaged food items must be stored separately from undamaged food.
0480 - Unlabeled food containers. Label contents.
0550 - Spoon handle burried in sugar. Store handle OUT of contents.
0570 - Wiping cloths improperly stored between use. Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
0650 - Food on display not properly protected at the service line. Provide proper sneeze guards to protect food from consumer contamination.
1060 - Bare wood pallets in use. Bare wood is not approved for use in a commercial kitchen since it does not meet the standards of smooth, easily cleanable, and non-absorbent. Paint the pallets or replace them with approved materials.
1550 - Handsinks are not sealed to the adjoining walls. Seal the sinks to adjoining equipment or walls since they are exposed to spillage or seepage.
1730 - End cap missing from scoop handle. Discard and replace the scoop since the handle is no longer considered easily cleanable.
1750 - Single-service aluminum pans are being reused. Discontinue the reuse of single-use containers for food storage. Provide approved reusable food storage containers designed for your food storage needs.
