Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. Food must be kept cold onsite. If the refrigerators are not running from the generator or plugged in, coolers with ice can be used or however as long as the food is 41 degrees or lower.
Critical: Handwashing Lavatory* Observation: The hand washing sink on the mobile unit is blocked.
Correction: Maintain accessibility of the hand sink for washing hands only. The 3 bay sink is for washing dishes.

Call for re-inspection. Repair prep unit with in 10 days. The True Prep Unit must maintain food at 41 degrees or cooler at all times when food is stored in it, when serving at The Salvation Army and when home parked plugged in.

Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. Repair the True Prep table so that it maintains food at 41 degrees or less.
Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* Observation: The prepared ready-to-eat (RTE) food in the refrigeration unit is not properly dated for disposition.
Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

-Clean the new truck thoroughly and wash and sanitize a equipment. -Clean the fresh water tank. -Provide a thermometer for the prep table. -Provide a grill on the bottom of the True reach-in. -Service the fire extinguishers and it is best to have a "K" type extinguisher for the fryers. -Food must be kept cold in the refrigerators at 41 degrees or less and all food prepared in the mobile unit. The owner/operator says that no food is saved from day to day. (No cooling and reheating) No violation noted during this evaluation.
