    Correction: Repair the warewashing machine's spray jets so they work in accordance with manufacturer's specifications.

    Observation: The temperature display for the warewashing machine's rinse cycle is inaccurate.
    Correction: Provide a functioning temperature measuring device at the (wash/rinse/sanitizing) compartment so employees can routinely monitor the water temperature.

    Observation: The kitchen handsink's faucet is loose. Broken bracket for the ice machine's white plastic dispensing plate.
    Correction: Repair the loose faucet and ice machine's broken dispensing plate bracket.

    Observation: The plastic door handle liner for the True 2-door freezer is cracked and chipped.
    Correction: Replace the freezer's door handle liner with one in good repair that meets manufacturer's specifications.
  • Critical: Equipment - Food Contact Surfaces and Utensils (corrected on site)
    Observation: Food contact surfaces of the wall mounted potato slicer were observed soiled with accumulations of food residues.
    Correction: Clean food-contact surfaces of potato slicer no less than every 4 hours to prevent the growth microorganisms on those surfaces.
  • Outer Openings; Protected (corrected on site)
    Observation: Rear screened door left open while unattended.
    Correction: Keep the door closed when unattended in order to provide a barrier against the opportunity of flying or crawling pests to enter the kitchen.

    Correction: Store employee coats in designated areas separate from food preparation and food storage areas.

During the inspection, cold holding methods were reviewed and discussed for the buffet unit. The employees and staff are well trained. Employee health, hand washing and no bare hand contact with ready to eat foods was discussed. Thank You.
