Correction: Resurface or replace shelving. Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent.

Observation: Floor under the stove and door and doorway in the kitchen are not maintained in good repair: Floor is missing tiles, door and doorway has peeling paint.
Correction: Replace the missing tiles under the stove, repaint the doorway and door to provide a smooth, impervious and easily-cleanable surface. Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Observation: The nonfood contact surface of the interior surfaces of the keg reach in refrigerator in the back bar and fan shroud inside the walk in refrigerator has an accumulation of grime and debris.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

- Top shelf of dish storage area.
- Shroud area of compressor inside the walk in refrigerator.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Correction: Provide self-closers for the toilet room doors. Completely enclosed toilet facilities minimize the potential for the spread of disease by the movement of flies and other insects between the toilet facility and food preparation areas.
- Physical Facilities - Cleaning Frequency and Restrictions
Observation: Hard to reach places of floors through out the facility (especially under and behind equipment and at floor/wall junctures) and wall behind the steam table in the kitchen, have an accumulation of grime and/or debris.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
