- Physical Facilities - Cleaning Frequency and Restrictions
Observation: Floors through out the facility (hard to reach places under and behind equipment and at floor/wall junctures) have an accumulation of grime and/o debris.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Correction: Install addition drainboard to provide additional drainboard and so that all cleaned and soiled utensils and equipment can be properly stored as they accumulate during operation.

Observation: Outdoor storage areas for refuse, recyclables, or returnables not made of approved materials. Super Cans are not on a hard, impervious surface.
Correction: Install a concrete pad to provide a hard, impervious surface for storage of refuse. Outdoor storage areas for refuse, recyclables, or returnables shall be made of approved materials. See 12 VAC 5-421-2600 and 2610.
