    Observation: Observed doors to establishment propped open.
    Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

    Observation: 0 ppm quat. sanitizer in 3-vat sink. Dishes are not being sanitized.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.

    Observation: Observed kitchen handsink blocked with dirty dishes.
    Correction: Allow access to handsink at all times. Store dirty dishes in another location.

    Observation: The outdoor refuse container is stored on absorbent material. (Operator plans to haul own trash until the pad is in place.)
    Correction: (Do not use outdoor refuse container until corrected.) All refuse containers are to be stored on smooth, nonabsorbent material that is sloped to drain.
  • Indoor Areas - Surface Characteristics
    Observation: The indoor ceiling material located over the food prep areas does not meet the standard of smooth. It appears to be durable and cleanable. (I have allowed operator to keep ceiling as is so long as they keep it clean.)
    Correction: Keep clean. If unable, you will be required to refinish or replace the indoor ceiling at the area designated so it is: 1. smooth, durable and easily cleanable 2. nonabsorbent
