Owner was present for this inspection. Reviewed use of time as a public health control for the displayed pizzas and calzones. Operator has individual tracking tags and is trying to design a way to track individual pizzas since the metal display counter is nonmagnetic.

Operator was instructed not to use the large pizza prep unit until it can hold food at 41oF or below. Operator agreed to serve limited menu as stated above until large pizza prep refrigerator is replaced. Operator to contact health department for iinspection and approval prior to going back to regular menu.

Violation: 1450 - Only one small pizza prep unit working properly. Menu was limited to certain pizza toppings that can be held there safely until new larger pizza prep table is installed this evening.
Operator stated that 2 new pizza prep units were being ordered to replace the ones that have had a history of not holding food at proper temperature. Provide additional pizza prep refrigeration necessary to maintain food items at 41oF or below. Overstocked equipment does not allow for proper air circulation and/or heat transfer. Improper food storage temperatures are a major contributing factor to foodborne illness.
Comments:
Operator was told it was ok to reopen the facility and the suspension notice was lifted.

Substantial compliance with the Food Code. Operator was using appropriate cooling methods for food. Good separation of food in the walk-in cooler. The 3 door reach-in prep cooler had just gone done on the prep line and the food had been transferred to the walk-in cooler. A work order has been called in.
