NOTE: Good job having the raw in-shell eggs stored below/ away from ready-to-eat foods in the fridge. Great job sanitizing dishes and letting them soak in the bleach/chlorine sanitizer for several minutes Reminder to always completely air dry dishes as this allows the sanitizer to fully do its job. Reminder to always wash hands prior to putting away clean dishware AND always wash hands prior to putting on gloves. Gloves are single-use and should be switched once they become torn, you change tasks, or they become contaminated from touching a cell phone, touching a drawer knob/pull, etc. Only storing gloves right at the hand sink can help encourage this practice. Facility has two (2) metal stem probe thermometers, but they were both sealed in the packaging in a drawer and not being used. Please monitor cooking, cooling, and holding temperatures of food.

NOTE: Great job sanitizing dishes and letting them soak in the bleach/chlorine sanitizer for several minutes as well as completely air dry (never use a towel to wipe dishes dry). Good separate storage of chemicals below/away from food and clean dishes. Good job having the raw in-shell eggs stored below/ away from ready-to-eat foods in the fridge. Recommended setting fridge to 35/36 degrees F. to help compensate for all the opening/closing. Reminder to ALWAYS wash hands just prior to putting on gloves and that gloves or single-use (do not take gloves off and then put back on). Left the 2015 ServSafe training schedule and encouraged having some staff attend.
