Notes: 1. Calamari on the cook line was found in a container that was taped on the outside and inside. Food was in contact with tape. Discarded. 2. Cans that were starting to rust and still had labels on them were being used to hold product down in the pickling process. Cans discarded. Use something that is food grade and can be washed and sanitized. 3. Buckets of greasy sanitizer were on the line. Utensils are stored or "rinsed" off in this solution. This was discussed during the 2/18/09 inspection. Do not store or "rinse" utensils in sanitizer. Sanitizer must be air dried on utensils before they can be used. . 4. Spray hose on sink goes below fill line. Install backflow preventer or fix so that it doesn't go below fill line of sink.
