Comments:
No critical violations observed at time of evaluation. The following items were discussed during the duration of the evaluation:
1. Discussed proper cooling methods for pulled pork observed in full pan in walk-in cooler. Recommended dividing into sheet pans and store, uncovered, on speed racks to cool. Advised to cool product from 140* to 70* in 2 hours and from 70*-40* in 4 hours.
2. Dish machine final rinse exceeds 194*. Contact dish machine service/maintenance to adjust final rinse temperature to 180*-194* @ 15-25 psi. Ensure wash temperature meets manufacturers specification for 160*.
3. Ensure dish room staff understands and demonstrates proper handwashing and glove use when handling soiled dishes versus clean. When employee was asked what action to be taken after handling soiled dishes, he failed to mention that gloves worn must be discarded and hands must be washed. Reviewed proper handwashing and glove usage procedures.
4. Discussed employee health policy with Certified Food Manager.
