Thaw the raw ground beef below the ready-to-eat foods in the walk-in cooler. Date label any ready-to-eat food items stored under refrigeration > 24 hours once removed from the manufacturer's sealed package. Employee training log and temperature log still not developed and implemented. Develop and implement both. Food items prepared for the employees must be consumed in the dining area. Remove the rusting cans of paint from the premises if not in use. Most of the violations cited on the August 3, 2005 inspection were corrected. Continue to correct the cited violations.
