CFM has very good knowledge of food safety. Discussed shellfish tags and retention time. Discussed cooling and reheating methods. No hot holding done. Good date marking in place. Kitchen maintained clean and organized at time of inspection. Temperature logs maintained. Food handler cards on file. Discussed upcoming changes to the 2013 FDA food code. Another CFM on site: Yolonda Duffee Exp: Oct 5 2015. Pest control company (under quarterly contract): Tidewater Termite & repair Inc Ph: 312-8081 Reviewed approved food source for fish and discussed methods for keeping tags for live shellfish. Left information on FHC and employee health. Discussed temperature monitoring of units. CFM has sign off sheets. Discussed cook temperatures of items on menu. Discussed consumer advisory for certain items. Currently no hot holding will be done (that may change in the future) Discussed methods for cooling and date marking. Calibrated thermometers available for monitoring cooking temperatures. New light fixture will be installed by 5/6/14 - over new Bev air prep unit. Facility will be No Smoking (including the outside deck area) CFM showed excellent knowledge of food safety and food safety practices.. New units had been purchased since facility closed in November 2013. Floor in kitchen had been replaced. Bathrooms and plumbing in good working order throughout facility. Recommended for and Issued Permit.
