Violation: 1530 - Repeat There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Obtain a Quatanery Ammonium and chlorine test kits so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
Comments:
Facility is in substantial compliance with Food Code regulations. Facility is well-organized and clean. PIC has instituted Employee Health Program and will post the Employee Health Notice in conspicious location for employees to view.

Discussed need to institute employee health policy as soon as possible. Most temperatures were within compliance except the tomatoes, which were volutarily disposed of. Need to ensure employees have access to hand sinks and are washing their hands appropriately. Will conduct follow up inspection next week to ensure compliance on critical violations.

Discussed the importance of monitoring all critical type food handling procedures to verify that active managerial control is being employed to prevent critical violations / risk factors from occurring. Operator instituted on-site corrective actions to minimize risk to public. Discussed the importance of reviewing this inspection periodically to verify on-going correction of the critical violations noted. Discussed bulk cooling procedures at length as well as developing an employee health polic by April 1, 2008.

Substantial compliance with the Virginia Food Regulations observed on this date. Sufficient refrigeration and adequate food preparation space observed to support the menu. Operators are currently Serv-Safe certified and plan to have other employees trained in the near future. Discussed employee health policy and specifics regarding the development of a working document to train employees. Routine inspection to occur in 30 days.
