The operator stated that the ES2000 dishwasher is leased and is going to be replaced with a similar unit that he is buying. Note: If the current dishwasher is used, food equipment, glassware, and dishware is to be sanitized in the 3-vat sink. All violations are to be corrected within 90 calendar days - on or about 11/27/08.
