Correction: Prep wells are not designed to cool product. Spread into a shallow pan and leave uncovered in the walk in cooler to cool quickly.

Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) Observation: Observed liquid eggs and cut melons in "Traulsen" reach in cooler at 46-48F.
Correction: Food moved to walk in cooler. Called for service.

Correction: Maintain nonfood-contact surfaces of equipment clean.
