Cheese measured at 49 degrees was not out of temperature for more than 4 hours. Temperature was lowering when measured at end of visit. Prep unit is holding temperature at 38 degrees F. Ceiling tiles will be replaced in the dining room before the end of July. CFM is expiring in August. Recommended for health permit renewal.

Food on the top of sandwich unit not holding temp. Food was triple panned not allowing for air circulation. Food was single panned and temp of sandwich unit was lowered. The only phf's stored on the top of the unit was tomatoes (volutarily discarded). Hood system needs a professional cleaning. Observed grease dripping from the top of air intake. Proper handwashing observed. Proper wash-rinse sanitize technique observed.
