Food and equipment was found to be within the proper ranges. Handwashing sinks were well stocked. The dish machine was sanitizing at about 100 ppm. Food storage order and employee health was discussed and information left with the operator. A consumer advisory is not required.

Have the thermometer of the dishwasher machine. Recorded wash water temp at 121 degrees the thermometer only reaches 108. Clean and organize dry storage are and discard unused/ unnecessary items.
Good job of clean facility and monitoring food processes. Monitor stacking of chicken pans in the 2-door reach-in.

Generally, facility was clean and well ordered, staff knowledgeable and wearing gloves when handling RTE foods, restrooms/handsinks clean and well ordered. Prepared foods properly labeled. Auto dispense sanitizer solution at proper level-quaternary ammonia at 300ppm. Good cooling procedures for chicken salad. Recommend PICs attend food safety manager training.

January 27, 2006 (Pre-Opening)

Comments:
This inspection is a pre-opening for a limited food service operation of coffee and baked goods. Handwash sink was well stocked and ready to use. The 3 compartment sink is operational. Chlorine sanitizer is available as well as a test kit. Tongs and/or tongs will be used to serve pastries. Pastries will be supplied by Albemarle Bakery and coffee will come from the MudHouse. There will be a curtain separating the coffee and serving area from the rest of the facility.
