Violation: 0820 A 1 - Critical Cheese sauce found at 131 degrees on table top steam table. Increase to 135 degrees or higher. It appears that unit may not be able to hold it higher-water temperature was 148 degrees, usually it is found higher. Have serviced.
Comments:
Dishmachine is down today. The three compartment sink was set up, however, no chlorine residual was left in sanitizing sink. PIC changed (dishes were not being done at this time). Sink was dumped and corrected to 100 ppm chlorine. Ensure milk table is cut at a 45 degree angle. New milk dispensing refrigerator has been installed. Very little business at time of inspection.

Drain pipes from 2 compartment sink are not centered over floor drain. Water spills onto floor. Realign pipes. Threshold to walk-in is dirty. It appears there is a gap from an old door causing an uncleanable area. Gap to be finished for cleanability. Relocate soap dispenser so food and equipment cannot be placed under it.

Comments:
Investigation of complaint alleging on 3/14/06 complainant found hair on plate and long, black hair in caramel of sundae. Upon investigation spoke with manager who was aware of situation. Upon inspection, cooks all had effective hair restraints. One server with long hair only had it clipped back and was mostly in face. Manager spoke with employee. Establishment is to enforce strict hair restraints to prevent contamination of food.
