Please be aware that the FDA mandates that all freezers shall be monitored by thermometers. All freezers require a thermometer. Until the high temperature is repaired sanitize all equipment and utensils with an approved chemical sanitizer. Call the Health Department when the high temperature dishmachine is repaired. A follow up inspection shall be conducted to check the high temperature dishmachine. 6/8/06 A follow up visit was conducted to check the high temperature dishmachine. At the time of the inspection the dishmachine final rinse temperature met the requirements for a high temperature sanitization. A test strip verified that equipment reach the required temperature of 160 degrees.
