    Correction: . Wipe counters with wiping cloths, wash hands and put on new gloves.

    Observation: No working thermometers provided in refrigeration units
    Correction: provide working thermometers in refrigeration units to ensure that TCS foods are being held at 41 degrees or less.

    Observation: under counter refrigerator on prep line is not maintaining correct temperature
    Correction: Have refrigerator repaired to keep TCS foods at 41 degrees or less. DO NOT USE UNTIL REPAIRED.

    Observation: grease and food debris build up in fryer cabinet with tray underneath on floor to catch dripping grease

    Observation: The nonfood contact surface of the inside of the reach-in refrigerator behind the sandwich prep unit has accumulations of grime, debris, and condensate.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Equipment and Utensils, Air-Drying Required
    Observation: Sanitized equipment were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth. Provide enough shelving to adequately air dry sanitized equipment.
