Observation: The 3 compartment sink is slow to drain. Employees observed using a single compartment sink to wash, rinse, and sanitize.
Correction: Plumbing systems and components shall be maintained in good repair. Continue to wash & rinse in single compartment sink and use tub to sanitize. CORRECT WITHIN 72 HOURS.

Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Initiate time control for safety, or have unit serviced and verify it maintains <41F prior to use for cold storage of potentially hazardous foods (PHFs).
