Facility agreed to voluntarily close until the plumber could clean out the drains to work properly, they clean and sanitize all floors in the kitchen, prep, dish and dining areas, including walk in refrigeration and freezer units, the dish machine functions properly and the refrigeration is repaired. Food from the non-working walk in cooler was discarded during inspection as it had been out of temperature at least 7 hours. The manager agreed to fax information to the health department stating what has been done and the time they will reopen and EHS will conduct a follow up inspection tomorrow. Strongly suggest the preventive maintenance be done with plumbing monthly to prevent future closures as any drain backup is considered sewage and an eminent health hazard.

Comments:
Manager states that they are keeping potato salad and slaw on the top prep unit only during lunch, then moving it to walk in. Tomatoes are the only other potentially hazardous products kept on the top prep unit. The low boys were maintaining food at 38 degrees and the bottom of the sandwich prep unit is 38 degrees F on inspection today.
