NOTE: Discussed proper cooling methods - do not cool foods in the same pots or containers that they are cooked in. Also, cool uncovered, but protected from environmental contamination. When you see droplets on the lid or top of a item that was cooling, this is heat trying to escape. Good job storing chemicals separate and below food and single-use items. Left and explained handout on handwashing with manual dishwashing and sanitizer concentration levels.
  • Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures (corrected on site)
    Observation: The rinse water temperature at high temperature ware wash machine was below the minimum allowable level of 180ºF. The thermometer read 164 ºF.
    Correction: Immediately discontinue the use of the machine for sanitizing dishes until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils. All dishware and utensils will be manually washed with soap, rinsed, sanitized with chlorine 50-100 PPM, and allowed to air dry.

    Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 180ºF. The thermometer read 171.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.
  • Handwashing Lavatory, Water Temperature, and Flow (corrected on site)
    Observation: Water from the handwashing sink in the kitchen was measured at a temperature less than 100°F.
    Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens.
