Sandwich unit still had water in the bottom of it. Owner will call a serviceman to fix it. Fish is purchased from Waterside for making ceviche. However, waterside purchases tilapia from Nishimoto. A HACCP letter from Nishimoto has been filed. All food properly date labeled. All food at the proper temperature. Temperature charts are up-to-date. All food properly covered in fridge units. Two new employees still need food handlers cards.

Violations: Comments:
Tilapia is used for cebiche. WIll check with waterside and sysco to determine if the fish has been processed properly to be consumed raw. Tilapia, crabcakes, and sirloin steak voluntarily discarded.Fridge unit is not keeping proper temperature. Owner will have the unit fixed. Discussed with him not to store any PHF's in the unit, until it has been repaired. Will reinspect next week.
