Observation: The chemical sanitizer was too strong. Observed slightly above 200ppm. Corrected to 200ppm Cl.
Correction: Use the chlorine chemical test kit to ensure the sanitizing solution is maintained at the proper solution.

Observation: Leak observed coming from pipe under women's bathroom sink, thus not maintained in good repair. Owner called a plumber who will repair it this afternoon.
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

- Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness (corrected on site)
Observation: Chlorine sanitizing solution used was not at an acceptable concentration. Sanitizer observed >200ppm, corrected to 100ppm. About 1/2 cap per bucket.
Correction: Adjust the chlorine sanitizing solution to a level of at least 100 parts per million when the pH is at 10 or less and the water temperature is 55°F.
- Critical: Equipment - Food Contact Surfaces and Utensils
Observation: Surfaces of the interior of ice machine were in contact with non-potentially hazardous food items that were observed soiled with accumulations of grime and debris. PIC stated they will relocate some ice to another container and clean unit.
Correction: Clean the surface of ice machine at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.

Observation: The temperature of the water was observed at less than 110°F. PIC adjusted hot water heater and water reached 114 degrees before end of inspection.
Correction: Maintain a temperature of 110°F and above or the temperature specified by the manufacturer for optimal performance of the detergent to clean equipment and utensil surfaces.

Observation: Dead or trapped insects and rodent were found in the control device
