Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses. Discard food.

Observation: Observed foods that were cooling stacked and covered.
Correction: Make sure foods that are in the cooling process remain uncovered during the cooling process and do not stack them, as that causes heat to become trapped.

I stopped by the restaurant because the fire department had shut them down for operating without the hood working on Sunday, February 9th. I spoke with the GM. He stated that all the exposed food was discarded. I also spoke with the Assistant Fire Marshall. He stated that once the motor is replaced they are ok to open.
