Owner was not present, newly hired employee was escorting and helping during inspection. Food handler cards were mixed throughout binder - inspector unsure of which employee did or did not have current food handler cards. Employee health policy Federal Form 1-B not been filled out by new employees, copy left for all employee to read and sign by follow up. Inspector agreed to call owner after holiday to determine follow-up time to meet. No food prepared during inspection.

No food prep/serve/handling observed during inspection. Food handler cards were scattered in binder - hard to determine. Inspector agreed over phone with owner to meet so that inspector can observe all necessary paperwork. Federal Form 1-B left to have all new employees read and sign.

No food prep or clean up being done at time of inspection. CFM not present, comes in for lunch only. All baby food is in date and FIFO principle is being used. Food in the cooler is labeled and dated for disposition. Establishment is recommended for permit renewal.

    Observation: No disposable towels were provided a the hand washing lavatory in the kitchen.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

Spoke to PIC about cooling foods down by ice bath instead of placing food directly into refrigerator. The food is cooling properly but the foods around the cooling food in the refrigerator is elevated in temperature.
Refrigerator is on coldest setting and has an ambient air temp of 42-43F. Temperature charts are being utilized for ambient air temperature, however, the built in thermometer to the unit was reading 50F. This is not accurate and a secondary thermometer was not found inside the unit. Food temperatures are required to get accurate readings of temperatures for the unit.
This will be evaluated at the next routine inspection.

Spoke with owner for inspection, left Federal Form 1B for employees to sign. Inspector also left schedules for CFM classes and food handler's classes.

    Correction: The permit holder shall designate a person in charge who is authorized to monitor and manage all food establishment operations and who is authorized to take actions to ensure that the Regulations' objectives are fulfilled.

    Observation: Valid food service cards could not be produced at the time of inspection.
    Correction: A food service employee shall have a valid food service card prior to working in the food service establishment. The person in charge shall not employ anyone to work in the food service establishment until they posses a valid food service card. A food service employee shall have a valid food service card while working in a food establishment.

    Observation: Less than 20 foot candles of light was noted in the dry storage area.
