Observation: An employee was observed shredding herb that goes into salad dressing that requires no further cooking with their bare hands.
Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.

Observation: The following food in the cookline make table is cold holding at improper temperatures: crawfish- 48*F, turkey-49*F, egg-44*F in the cookline make table
Correction: butter- 90*F out at room temperature.

Observation: Less than 50 foot candles of light was noted at the cookline (15-34 fc) and back room prep sink/area (19-39 fc).
Correction: Provide at least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor.
