The employees are properly cleaning the espresso machine. Discussed the cleaning procedure for the newly obtained juicer, and the equipment is being cleaned according to manufacturer specifications. Continue to use methods to eliminate excess flies. New fly traps have been installed. All sanitizing solutions are the proper concentrations, and wiping cloths are stored in the sanitizer buckets. All handsinks are stocked with soap and paper towels.

Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours. 4) In running water of sufficient velocity to flush particulates to the drain. 5) In a clean, protected location if the utensils are used only with a food that is not potentially hazardous. 6) In a container of water if the water is maintained at a temperature of at least 140F and the container. CORRECTED DURING INSPECTION.
Comments:
The following violations have been corrected from the previous inspection: 1. All potentially hazardous foods are being stored in the cooler (37 degrees), and are at the proper concentration. 2. All containers of cleaners are properly labeled. 3. New pest control measures have been implemented by the facility (Lights with fly paper, strips used at nights, etc.). These methods appear to be helping to cure the pest problem. 4. The handsinks in the facility are not being used as dump stations. 5. All pieces of equipment noted on the previous inspection have been cleaned. 6. All nonfood contact surfaces noted on the last inspection have been made smooth and cleanable. 7. The coffee cups in the customer area are protected from contamination by a temporary splash guard. A permanent guard is on order. 8. The health permit is displayed in a viewable location. 9. The door gasket of the back prep cooler has been repaired. 10. All areas noted on the last inspection have been cleaned. The facility has shown significant improvement from the last inspection.

All employees were washing hands at the appropriate times and frequency. All sanitizing solutions were the proper concentration. A chemical test kit is available and is being used. Routinely monitor the temperature of the coca cola cooler with an accurate thermometer to ensure that it is functioning properly.
