I set-up a wash, rinse and sanitize situation in their 3 compartment sink using 5 gallon buckets. This way they can wash the small utensils and kitchenware items and not have to set-up the big sink bowls. The buckets were labeled to match the labeling on the 3 compartment sink.

Comments:
Corrections from inspection on 11/18/03: Raw animal foods are being stored separately from ready-to-eat foods in the walk-in refrigerator. Food is being covered in storage. Scoops with handles have been provided for use in dispensing bulk food. Food is no longer being stored on menus. There are no wooden bowls in use. The lights in the walk-in refrigerator and the back storeroom have been properly shielded. The back door is now self-closing and weather stripping has been added around the door. Thermometers have been provided in the refrigeration units.

Light bulbs have been changed throughout the kitchen and the kitchen lighting is much better. The stained ceiling tiles have been replaced.

Comments:
Corrections made from inspection on 6/25/03: The walk-in refrigerator has being rearranged so that raw meat is being stored together and is not above ready-to-eat food. The food is also being stored off of the floor. The can opener is clean. Eggs rolls are no longer being stored on menus. Food grade containers have been provided for food storage and food grade storage bags are being used instead of grocery bags. The wooden bowl is no longer in use. Proper shielding has been provided for the light in the walk-in refrigerator. The stained ceiling tiles have been replaced. Knives are not being stored between tables. Manufacturer's containers are no longer being reused for food storage. The back door has been made self-closing ( still needs to be tight-fitting ). The inside of the walk-in refrigerator has been cleaned.
