This is a 30-days follow-up inspection. The facility has corrected almost all the previous violations, cited during an inspection on 02/26/2016 EXCEPT the floors. The PIC said that the management is working with some contractors and expected to replace the entire floor in July.

    Correction: Physical facilities shall be maintained in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. This requirement is intended to ensure that the physical facilities are properly maintained in order serve their intended purpose.
  • Cleaning, Frequency and Restrictions
    Observation: The kitchen walls and shelving are not cleaned as often as necessary to keep them clean.
    Correction: Physical facilities shall be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
04/16/2013Routine
1. The location is generally reasonably clean but there is some build up in the walls and ceilings of the kitchen.
2. The floor was observed to be in poor repair near the 3-part sink.
3. A slight odor, possibly due to the grease trap, was noted during the inspection.
4. The rinse for the main dish machine was measured to have 50 ppm free chlorine, which is an appropriate amount. The sanitizer bucket was measured to have about 300ppm quaternary ammonia, which is also an appropriate amount.
5. The location is reminded that all items in a commercial kitchen need to be designed to be nonabsorbent, smooth, easily cleanable, and to stand up to commercials cleaning. Itmes such as milk-crates, mayonnaise and dressing containers, and even towels used as equipment do not meet the requirements. Similarly, sponges are not appropriate to use to clean food contact surfaces as it is not possible to appropriately sanitize a sponge.
6. All food contact surfaces must be air dried. It is not appropriate to use a cloth to wipe down plates as it can be an opportunity fro cross contamination.

  • Critical: Shellstock, Maintaining Identification
    Observation: Inadequate record keeping system of Shellstock tags. The location has tags going back for at least 90 days but the current system dose not correlate a specific tag to the dates when it would have been served. The location is planning to start a system of dating the tags from here on out.
    Correction: Use an approved record keeping system that keeps the tags or labels in chronological order correlated to the date when, or dates during which, the Shellstock are sold or served.
