Comments:
The ambient air room temperature of the kitchen at the time of inspection was 104 degrees Fahrenheit (F). Recommend maintaining a temperate room temperature in the kitchen between 75 F and 85 F. The kitchen's ventilation hood and filters have a significant build-up of grease and grime. Immediately clean the ventilation hood and filters. Place a lid on the Ladies restroom trash container. The paper towels in the Men's restroom towel dispenser are jammed and will not dispense. Unjam the paper towels in the towel dispenser.

Date label all sealed containers of cooked and precooked foods stored under refrigeration with a 7 day "use by" date if held under refrigeration > 24 hours after the manufacturer's seal on the container has been broken. The current metal stem thermometer furnished to the cook has a probe that is too thick for accurately monitoring the cooking temperatures of thin cut chicken wings. Obtain a thin probe metal stem thermometer so the internal cooking temperature of the deep fried foods can be accurately measured. Correct all cited violations before the February 2009 permit renewal inspection takes place.

1060 - Rusty shelf located under the cookline counter top. Replace or resurface the rusty shelf.
1060 - Cardboard box being used to store equipment and utensils. Use storage containers that meet the criteria of smooth, durable, easily cleanable, and nonabsorbent.
1100 - The handle fasteners on the hand-held deep fry skimmer were not mounted in a manner to be easily cleanable. Obtain a different skimmer were the handle attachment to the skimmer basket meets the criteria of being smooth, durable, easily cleanable with no pertrusions or sharp angles.
2000 - Box of glassware was found stored on the floor. Store equipment in a clean, dry location where not exposed to splash, dust or other contamination at least 6 inches above the floor.
3220 - Mop not hung up to air dry. Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
Comments:
Currently, the 4-compartment sink has only 1 drainboard with no room to install a second one. Designate the first compartment of the 4-compartment sink as the dirty dish storage sink and use the next 3 sink compartment in the order of wash, rinse, and sanitize. Use the drainboard for air drying the clean utensils. Label the sink basin's accordingly.
