Dishmachine has been serviced. It is sanitizing but final rinse digital readout did not reflect the proper temperature. Thermolabel turned black and thermocouple registered a 167 F plate surface temperature. Have service tech check digital readout. Permit issued.

Correction: Counter to be smooth and cleanable. Replace missing panel.

Follow-up
Freezer is being stored on temporary trailer. A small homestyle ventilation fan was installed above counter. This is where the induction burner is placed to scramble eggs. Permit expires 4/30/15. Call for reinspection.
Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) (repeated violation) Observation: Butter and cream cheese not holding at 41 F or below during breakfast.
Correction: PIC stated it will not be kept today. PIC will relocate crocks to another location away from heat source.

No critical violations. Recommend not using induction burner for eggs. Proper ventilation is needed for this task. Use oven or microwave for cooking eggs. No grease laden vapors allowed to be produced without ventilation. No foods are kept after breakfast. Eggs, waffle batter and oatmeal are discarded. No violation noted during this evaluation.

Critical: Food - Potentially Hazardous Food - Cold Holding* Observation: TCS foods found >41 degrees and not held on time control. Found cream cheese (single serve packages) at 52 degrees - container had not been frozen overnight
Correction: 1/2 gallon containers of milk that are on top of ice at 46 degrees - this milk is used for coffee and/or cereal and needs to be in container or refrigeration unit that keeps it 41 degrees or less or the remaining milk in each carton must be discarded after the meal period (held <6 hours at 41-70 degrees). Also, the cantaloupe cut this morning is 50 degrees in a bowl on top of ice - this cannot cool to <41 degrees in 4 hours as required so must be discarded if not served in 4 hours.
