Please monitor the walk in refrigerator and food temperatures in the walk in twice each shift. Equipment logs will be review during the next routine inspection. If unit is not able to maintain foods then remove all potentially hazardous foods and move to adequate refrigeration. Additional refrigeration will be necessary and will be required if unable to hold the quantity of food the establishment needs properly.
