Comments:
Critical procedures inspection was conducted by reviewing logs kept by the facility over the past several months, recommendations were given to the PIC such as documenting the time when cooling begins at 135 degrees F, documenting when variations in normal procedures occurr, when using precooked foods notes should be made to indicate that on the temperature logs . In looking at the dishwashing logs, if the strips have not turn the appropriate color, corrective actions should be documented. Management should review temperature logs, to ensure corrective actions are not necessary and if they are what action is taken

Employees should not use infrared thermometers for checking cooking or cooling temperatures. Temperature logs reviewed, temperatures should be recorded immediately after they have been taken, also loggs should be continously reviewed by management so that irregularities can be noted. Unit logs reviewd, log sheets should state cold holding at 41 degrees F. Visited unit to check cold holding however rethermalizing was occurring
