Discussed the following with the Certified Food Manager: 1) Store chemicals off the floor in the ware washing area (corrected during inspection) 2) Foods for which time rather than temperature is used - Keep procedures up to date and mark the items with the discard by time 3) Reheat opened commercially processed foods to 165 F for hot holding. 4) Contact time for sanitizing meat slicer - 30 seconds for quaternary ammonium.

    Observation: Employees wearing jewelry on their arms and hands while preparing food.
    Correction: Ensure employees are not wearing jewelry on their arms and hands while preparing food. This section does not apply to a plain ring such as a wedding band.

    Observation: Food stored on the floor or food stored less than 6" above the floor in the walk in units.;Elevate food storage onto approved shelving with minimum 6" legs or casters.

    Observation: Vegetable soup (130 F) hot holding at improper temperatures. PIC reheated soup to 170 F.

    Sliced tomatoes - 47 F, Ham - 43 F, Basil Mayo - 45 F.

    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. PIC relocated foods to a unit that maintains an ambient air temperature of 41 F or below.
  • Warewash Machines, Temperature Measuring Devices
    Observation: The temperature measuring device for the warewashing machine is not operating.
    Correction: Provide a functioning temperature measuring device at the (wash/rinse/sanitizing) compartment so employees can routinely monitor the water temperature.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chlorine chemical sanitizer in the mechanical dish machine.
    Correction: Obtain a chlorine test kit for the mechanical dish machine so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The 3 door under counter cooler by the cash register is not able to maintain an ambient air temperature of 41 F or below. PIC removed all food and relocated to the cake display case (ambient temperature of 32 F)
    Correction: Repair the 3 door under counter cooler by the cash register to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the cooler, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Wall and Ceiling Coverings and Coatings
    Observation: Wood on the bottom of counter tops of wall partitions in the food prep area is not finished and sealed to provide a smooth, nonabsorbent, easily cleanable surface.

    Observation: Working container of a chemical cleaner is not properly labeled in the mop sink room.
    Correction: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.
  • Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site)
    Observation: Chlorine sanitizer (exceeds 200 ppm) being applied to food contact surfaces in the mechanical dish machine does not meet the requirements of 40 CFR 180.940
    Correction: Discontinue the use of the dish machine until the sanitizing dispensing system is repaired in order for the chlorine concentration to be between 50 - 200 ppm. Use the 3 compartment sink for washing, rinsing, and sanitizing procedures. PIC contacted ECOLAB during this inspection and a professional from ECOLAB will visit facility to fix the dish machine.

This was a follow up inspection from 7/13/2015. Previous violations corrected. The following was discussed with the Person In Charge (PIC):
Recommend obtaining a sliding lid for the sample dips. Lower the thermostat for the sandwich make unit and keep a temperature log. If unit is consistently maintaining temperatures of 41 or greater, have it serviced.

No violation noted during this evaluation.

Discussed the following with the Person in Charge (PIC) : 1) Provide handwashing sign at the front handwash sink 2) Need more managerial enforcement for employee hair restraints and food sample protection.

    Observation: Employees observed working in the food service area without proper hair restraints.
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food

    Observation: Prepared dips being offered in open bowls on a table by the front door.
    Correction: Protect food from cross contamination by storing food in packages, covered containers, or wrappings.

    Observation: Ham (41 - 53 F) and roast beef (41 - 50 F) observed overstacked and cold holding at improper temperatures
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. Do not overstack deli meats to ensure proper cold holding temperatures.

    Observation: No written procedures for the use of time as a public health control with potentially hazardous foods.
    Correction: Provide written procedures for the use of time as a public health control. The procedures must include the following steps or practices: a. The food is served or discarded within four hours from the time when the food is removed from temperature control c. Food in unmarked containers or packages, or for which the time expires is discarded and d. Written procedures are maintained in the food establishment and made available to the regulatory authority upon request e.     Correction: Clean the surface of soda machine chute at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.

The mistaken use of food from an unlabeled container could result in chemical poisoning.
