    Observation: Observed salsa & rice in reach in cooler and feta cheese on the right side of the 2 lid prep table cold holding at improper temperatures. Left side and bottom part of the 2 lid prep table were adequately cold holding.
    Correction: Discard all TCS food in the reach in cooler. Discard the feta cheese in the prep table. Adjust thermostats in both refrigerators and maintain TCS food at 41°F or below to inhibit the growth of harmful bacteria.
  • Equipment - Non-Food Contact Surfaces and Utensils (repeated violation)
    Observation: The interior of the ice machine was observed soiled with "mold-like" black substance.
    Correction: Clean the surface of interior of the ice machine at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.

    Observation: Observed sliced cheese, block cheese, salsa, and rice cold holding at improper temperatures in a prep table and the reach in cooler.
    Correction: Adjust the temperature of both units to maintain TCS food temperatures at 41°F or below to inhibit the growth of harmful bacteria.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness*
    Observation: Quaternary Ammonium sanitizing solution used was not at an acceptable concentration.
    Correction: Adjust the sanitizing solution to 200 parts per million or otherwise identified by manufacturer's recommendations.

    Observation: Surfaces of the ice machine was in contact with non-potentially hazardous food items that were observed soiled with accumulations of grime and debris.
    Correction: Clean the surface of ice machine at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.

    Observation: No record identifying the genus and species of parasite-destruction exempt tuna species (e.g. Thunnus albacares, Thunnus atlanticus, Thunnus alalunga, Thunnus maccoyii, Thunnus obesus, or Thunnus thynnus)
    Correction: Provide the genus and species of tuna served raw, marinated, raw-marinated, partially cooked or marinated partially-cooked fish to verify that they do not need to be frozen for parasite destruction because they are exempt.
  • Records - Creation and Retention (repeated violation)
    Observation: No written agreement or statement from the supplier or aquaculturist stipulating that the fish, such as salmon, were raised (open water in net pens

    Observation: Chicken stock, tomato stock and butter in the tall single door reach in on the saute side cold holding at improper temperatures
    Correction: REPAIR OR REPLACE THE UNIT. DO NOT USE THE UNIT UNTIL THE UNIT IS CAPABLE OF MAINTAINING PROPER FOOD TEMPERATURES. Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.

    Observation: The cutting board(s) along the grill side deli prep unit and the other large deli prep unit are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized. ONE CUTTING BOARD WAS RESURFACED AT PRIOR INSPECTION.

    Observation: FLOOR TILES in the kitchen are not maintained in good repair
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: Observed a large amount of fruit flies under and around the keg cooler downstairs. Under the cooler observed with moist, soiled towels that when removed, flies disbursed from in a large quantity.
    Correction: The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by using methods such as trapping devices or other methods as required.

The system must ensure that shellstock from one tagged or labeled container is not commingled with shellstock from another container before being ordered by the consumer.

    Correction: Discard the food at this time and ensure all prepared RTE food is served, sold or discarded by the ""consume by"" date. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
