Discussed violations with the operator. The dishmachine has a light indicator for the sanitizer. The one reach in refrigerator on the cookline was reading at 45 degrees, taking an internal temperature of the heavy cream the results indicated that the temperature was 52 above the correct temperature. I then had the employees go through and remove all of the products and place them in another unit and watch the refrigerator to see if the temperature would come down to 41 or below and if the temperature did not decrease then there would be a problem, but all of the food would have been removed.
