Correction: meat well unit is keeping proper cold holding temperature but meat is being held in top of well is not staying cold. Consider using bottom of unit to hold raw patties. Sliced tomatoes can be held by time as your public health control. Pre-chilled tomatoes that come out of the walk in at 41 degrees, don't go above 70 degrees, have 6 hours to be used and then discarded.
