The inside of the microwave had some debris build up on it that had not just occurred this morning. Please clean and sanitize this unit more frequently.

The faucet at the prep sink is loose; secure this so it is in good repair.

All cold foods were below 41 degrees F or frozen. Thermometers were provided in the units as necessary.
- Information: Hot Food Temperatures 135°F or (59°C) or warmer required. Two degrees, 2°F (1°C), of tolerance is given based on thermometer accuracy.
Hot foods were above 135 degrees (sauece). Watch meatball temps and ensure they are properly reheated before being hot held. Provide a tip sensitive thermometer to take the temperature of thin foods. Thermometers are provided but not tip sensitive ones.

Light bulb was out in walk in freezer but the cooler had visibility of products in it. A tile was missing near the door of the walk in freezer. Ensure that all in place equipment is washed, rinsed and sanitized at the required frequency.
