Operator observed washing dishes with a large package of hot dogs unopened in the middle section of the three compartment sink. Do not store food in a sink not meant for food preparation. The sink was not clean and is only meant to wash dishes. Operator moved the hot dogs to the freezer. No contamination of food observed. The package of hot dogs was wiped off out of an abundance of caution.

I observed one employee handle dirty dishes and then handle packages of hot dogs without washing hands in between tasks, Management was instructed to have employees wash hands when switching tasks and whenever necessary. Please read below:

The poultry walk in cooler is holding foods at 46F. A few boxes of chicken observed below 41F. There was ice build up on the evaporator line(s) This is not a normal situation. Operator called Hunter-Davisson Inc. for a repair. All chicken not out of temperature control for longer than 4 hours was moved to an alternate walk in cooler and the rest was discarded.
