CFPMPhilip Peterson; WCHD cert M100735; 11/29/15No one has taken an inital certification in the last year and failed.Discussed new CFPM regulations.No violations noted at time of inspection.Facility mixes and packages dry spices. No TCS foods on site.Notes:-hand sinks stocked; observed good employee handwashing-no bare hand contact procedure in place; scoops are used for handling product-3 compartment sink and test strips available; measured at 200ppm quat-food properly stored-chemicals labeled and properly stored-discussed date marking/ lot coding/recall procedures/ first in; first out procedures with no issues noted-restrooms stocked and clean-discussed equipment cleaning procedures with no issues noted-reviewed HACCP plan with no issues noted; all incoming spices are treated in ethylene oxide or propylene oxide sterilization chambers before processing.-sterilization process verified by third party testing; also have in house QC testing program-linens done by Cintas; good separation of clean and dirty linens-regular pest control by Orkin; no pest issues noted at time of inspection-discussed employee health - ensure anyone with gastrointestinal symptoms (vomiting / diarrhea) is excluded for 48 hours after symptoms stop.

Elite Spice operates its own microbial reduction systems - Ethylene Oxide and Propylene Oxide are used. These are FDA approved. Handsink stocked and accessible.Floors; Walls; Ceiling in good condition. Observed proper handwashing onsite.

The following was observed during the inspection:Spice rooms clean and equipment clean.All spice products stored properly and labeled. Facility in good condition.All spices are sterilized onsite. Propylene and Ethylene Oxide. Pest control is done by Great Basin Pest - Once a week inside and once a month outside. - no problems noted. All chemicals stored in separate location away from spice products.Discussed bacteria testing for salmonella and coliforms. Looked over lab test results all negative. Discussed swabbing technique.*Discussed proper disinfectant for cleaning of Comil - Elite Spice cleaned the equipment properly. Went over specfications for Quat. Quat rated to kill HBV. All the product was discarded.
