Violation descriptions and comments

The Cuba Bakery location on McNeil has closed and the owner has moved all service and production to this location…but this location does not have the cooking/baking completely installed. (It was permitted for a holding and service location only late last Summer 2010.) The on site employee communicated that several items are brought from the owners home and served to the public.
Documented and voluntary destroyed the foods that were from the unapproved source (his residence) and communicated to the owner when he arrived that all foods must be prepared, stored and served from this location. (The owner communicated that Round Rock Fire Department would not allow cooking equipment without a hood system.) Again I provided information from the TFER that all foods must not come from home for retail service. Also the owner built wooden prep tables. He stated that they are used for rolling out dough and baking in their one convention oven. I noticed a few “cutting marks” on the wooden plywood and communicated to the owner that a food contact surface must be safe, durable, non absorbent, easily cleaned and resistant to scratching scoring and chipping. I stated that I would communicate to our supervision concerning these plywood tables.
He did voluntary close since he had a limited amount of foods available from the approved source (his permitted production area.) He also had not paid for his 2011 Permit….
Was curious about 229.165(a) 9 (B) (i)….. the use of wood for a food contact surface……
….”close-grained wood may be used for: cutting boards; cutting blocks; bakers tables…..
This is a plywood surface…..can he seal this??....add another hard surface to the plywood???
