Violation descriptions and comments

11-23-10, Walk-in cooler is borderline. Asked to have it serviced and to call the office with the results of the servicing. St

Re-checked walk-in and prep cooler for safe temperature. These are chronic violations. Walk-in was <40F but prep cooler was 48F. Left narrative to immediately correct and re-visit fines will be assessed.

Rechecked walk-in and prep line refrig for repairs - prep line ok but walk-in borderline. Recommended another service visit. These are often out of temp.

8/10/11 Prep cooler @ 60- requested service receipt be brought to office. Walk-in marginal @ 39/43/46 degrees.

2/16/12 Risk category-2. Info given on bare hand contact. Line cooler take out of service. SOP for sliced tomatoes on ice- 1 row of tomatoes stored on ice. Jw

8/29/12- Follow-up on Cooler issues: Walk-in @ 38 degrees F. Line Cooler @ 60 degrees F (product in line was on ice to maintain temp. Will Follow up in approximately 7 days. DJ.
8/14/12- Walk in cooler at temp of 53 degrees Farenheit. All product in walk in out of temp. Line coole not on due to braker being off; all line cooler product out of temp. CAP plan requested within 7 days.
Bare hand contact occuring- all proper documentation in place to perform task correctly. DJ.
8/20/2012- CAP Plan received for Cold Hold violation.
