On the cold-top refrigerator in the grill area, tzatziki sauce was 44�°F and cut lettuce was 45�°F.
Dry wiping cloths used on noodle pans were soiled with residue.
Tongs were stored unprotected from contamination on the handle of the batch heater. Utensils were stored in a dipper well that was not circulating water.
When turned on, the line from the dipper well was leaking water onto the floor.
